Winter Lake Camping, High Rock Lake NC

So this weekend I headed out with my buddy Eric to do some Winter Camping next to the lake. I got to the site early Friday after noon and started to get everything set-up. I have the use of a pop up camper and although it is water tight (at least the last time I used it in the rain) I though some extra traps over the sleeping area would help keep a little heat in and stop the rian from finding any holes and get into our sleep areas.
It was cloudly and threatening rain but up until I got there had done nothing.
But nature has a sence of humor, as I was putting up the last tarp to complete the pop up...
it started to rain.... but 10 minutes later I was all done and inside and toasty warm.



Although it rain all day Saturday, it wasnt that cold, but Sunday, the rain stopped and we could build a fire, but MAN, it was cold. I think the high was 38 F.

Even though I didnt have any good light as it was cloudly all the time, I did take some pictures for you guys.

Homemade Bread and a Cute Kitty!

Culinary Adventure: Quick Sauteed Cabbage

With my next culinary experiement I decided to tackle...CABBAGE!

I thought that if Kale is closely related to Cabbage then maybe I could cook cabbage just like I do Kale.

The following is for 2 portions....

Ingedients:
1/2 Cabbage
2 Green Onions
1 Clove Garlic
1 TBL Pure Olive Oil








Cut the cabbage into thin strips


Cut  up your green onion...















and finally mince your Garlic Clove...

 Heat you pan to medium and add the TBL Pure Olive Oil. Sautee you onions and garlic..





















Once the onions and garlic get fragrent, add your cut cabbage and sautee for 3 minutes. Salt and Pepper to taste and serve!!

Homemade Italian Dressing

In todays post I will going over a non- vinagar based Italian Dressing (with no Corn Syrup!!)

The recipe is pretty simple 1 part lemon juice to 2 parts Olive Oil. Salt, Pepper, Garlic, Onion, Dried Oregano and Basil.

First up we will juice the lemons into a measuring cup and remove any seeds that come out.
















Pour the lemon juice into a bowl and add twice the olive oil as you have lemon juice.



















Add a little salt and pepper to taste...

...and then add the clove of garlic and about the same of onion (minced up). Then add the orageno and basil.
Now mix it all together!















Pour dressing into your favorite container of choice ( I like canning jars, in this case a jelly jar)


and there you have it, Homemade Italian Dressing!! This dressing will last 90 days in the Fridge (not that you wont use it all before then ;) )

Fresh Farm Rasied Free Roam Eggs

One of the kind women at my Wife's work has some egg laying chickens and asked if we wanted any eggs (heck ya!) All we have to do is provide a egg carton.
I gave my wife a carton I had just put in the pantry just for this reason.

I was able to pick them up from my wife workplace and man I was pleased!!



















I am a big fan of anything home grown and organic.
It is a real treat to get these, turns out the donor of these eggs likes Whole Wheat Bread.....
Guess what I am going to make in the oven for her ;)

For those who have never tried home rasied eggs, you will be surprised on how vibrant yellow the yorks are and they have ALOT for flavor then the normal eggs you buy at market (except the organic eggs, those are pretty good)

Dutch Oven Bread Bake 2....

A Great Success!!

Sunday I felt the urge to bake again so at my wifes request, baked up a giant loaf of White Crusty Artisinal Boule Bread in my Dutch Oven.
This turned out fantastic!! Nice and crunchy on the outside and chewy and delicious on the inside.
Its also big enough to last all week!!


Anyone in and around the Salisbury Area can order one of these for the donation of $5.00 (limited time offer). Takes me about 3 hours total to make it but man its well worth it!

Recipe Idea: Pizza Lasagna

I was looking through what I had on hand in the fridge and the pantry for some dinner ideas.
Ive have some whole wheat lasagna noodles for a while, but didn't have any ground beef, ricotta etc to make a traditional lasagna. But I did have goodies to make a pizza (except the shell) So... I improvised!
and this is what I came up with!

Pizza Lasagna

ingredients:
1 lbs Ground Chicken (or Beef or Turkey)
Dash of Salt, Pepper and Garlic Powder
1 Package Whole Wheat (or Regular) Lasagna Noodles
Peperoni Slices (as Desired)
Sliced Mushrooms (as Desired)
Onion (as Desired)
Tomatoes (as Desired)
(Really any Pizza topping you enjoy)
Pizza or Marinara Sauce (or Both)
Mozzarella Cheese (and any additional cheeses of your choice)


Start by Getting you boiling pot up to temperature for the noodles
Then begin browning your Ground Chicken
Season with Dash of Salt, Pepper and Garlic PowderAdd noodles to boiling water and boil to desired softness
Once noodles and ground meat is done put a layer of noodles in the bottom on a casserole dish.
Top with some pizza sauce and spread about half of ground meat over the sauce, now add some vegatables if you like. Then spread some mozzarella cheese on top.
Now put another layer of noodles 90 degrees from your last layer.
Now spread more pizza sauce and cover with the other half of the ground meat.
Add more vegatables like mushrooms, onions, peppers etc.
Cover with more cheese (on this layer I used provolone slices)
Add another layer of noodles mimicking the direction of the first layer
More Pizza sauce.
Now add the toppings of your choice. In my case I did peperoni slices, sliced tomatos, onions.
Now cover with your final layer of mozarella cheese ( and any other fancy cheeses, like Romano or Parmesan cheese )
Cover dish with aluminum foil and back at 450 for 20 minutes.
Uncover and back an additional 5 minutes.
Remove and let sit for 5-10 minutes.
Serve and enjoy!

A Walk thru Granite Lake Park

As today is likely the last "warm" day here, I decided to take my Daughter to the local Granite Lake Park.
This park surrounds a former swimming lake and connects to Granite Qaury Civic Park via a nature trail.

On the lake today was one solitary duck, living the good life ;)





I discovered that my daughter has the same great eye as I do as she noticed some cool things to photograph!





Just as I noticed a cool circular patch or green moss with a bench in th emiddle of it, I noticed Sierra had stopped and was already taking a picture with her iTouch.






































































It was a great day to be out and about!!
