Test Run: Dutch Oven and Homemade Bread

so, one of my Christ mas gits from my amazing wife was a 8 Qt Cast Iron Dutch Oven.
As I am a student of the culinary arts I was aware that baking your bread in a dutch oven ws th best way to get a classic artisinal crust (just like you buy in he stores for $4 loaf)
We today I did a test run with my Dutch Oven and I wasnt disappointed!
I followed my normal method of getting the dough ready as seen here;

But instead of using a pie pan with water and variable temps, I just preheated the oven to 475F with the Dutch Oven inside heating up as well.
Once the dough was ready to bake into the Pot it went.
The Bread cooked covered for 30 minutes. Then the lid was removed and backed an additional 10 minutes with teh temp lowered to 375F.
The smells were awesome in the house!!
Once the baking was done...I beheld a wonderful crusty Whole Wheat Loaf!!



...and YES, It tastes as good as it looks!! The crust was nice and crunchy and the center was just perfect and chewy. THIS was the best bread I have ever made!!  Period!
